assume we have AIX servers running on blades, how can we monitor syslog messages and/or other (application) log files on zManager or on an zOS LPar ? This should be described in Chap 14.3 or equivalent

in general operating system and application monitoring methods do not change when using zManager.
For AIX, if a Syslog server in your infrastructure, then a AIX virtual server can be configured to send messages to this syslog server.
Syslog messages from VIOS cannot be collected/send to a syslog server, since VIOS is considered Microcode from zManager.
For applications the "typical" monitoring tools can be used as of today.
From a z/OS perspective there is also no change.
